Chicken Fajita Rice Bites
Taco bowl vibes… but make it bite sized | Yields 3 [4 bites = 1 serving]
Ingredients
- 180g jasmine/basmati white rice (cooked)
- 30g liquid egg whites
- 1 pack (1lb) lean ground chicken
- 100g bell peppers, diced
- 50g yellow onion, diced
- 30g salsa (optional for moisture)
- 90g nonfat plain Greek yogurt
- 75g avocado, diced
- Garlic powder
- Siete Mild taco seasoning
- Avocado oil spray
- Cilantro
- Salsa
- Salt

Instructions
- Preheat oven to 400 degrees and lightly spray a 12 square brownie bite pan or muffin pan
- In a bowl, combine cooked rice, egg whites, garlic powder, and salt
- Divide rice mixture evenly into 12 squares and firmly press down and slightly up the sides to create mini cups/bowl
- Bake for 12-15 minutes, or until edges begin to crisp
- While rice cups bake, heat a skillet over medium heat. Add peppers and onion and cook 3-4 minutes
- Add ground chicken and cook until browned, breaking into crumbles. Stir in taco seasoning and salsa (if using).
- Remove rice cups from oven and fill evenly with chicken mixture
- Return to oven for 8-10 minutes
- Top with greek yogurt, avocado, salsa, and fresh cilantro if desired
