Half Homemade Banana Bread Muffins
A delicious easy grab and go-- perfect for a snack or breakfast! [Makes 12 muffins. Macros for 1 muffin]
Ingredients
- 1 box Simple Mills Banana-Bread Muffin and Bread Mix
- 2 large eggs
- ½ cup water (reduce from ¾ cup to balance added protein)
- 14g (1 tbsp) oil (coconut or olive)
- 1 scoop Vanilla Protein Powder
- 36 HU Hunks (approx. 4 pieces per muffin)
Easy Swaps
Coconut Oil
Olive oil, avocado oil, ghee butter
HU Chocolate Hunks
Dairy-Free Chocolate Chips (Lily's good option)
Instructions
- Preheat oven to 350°F. Line or oil spray a muffin tin.
- In a mixing bowl, whisk together eggs, water, and coconut oil.
- Add Tejari protein powder and stir until smooth.
- Fold in Simple Mills mix until fully combined.
- Divide batter into 9 muffin cups.
- Drop in 4 HU hunks per muffin cup (optional)
- Bake for 25–28 min, or until a toothpick comes out clean.
- Cool for 5 minutes, then transfer to a rack and enjoy warm!
