Chicken Island Bowl
A delicious Island Bowl -- serve in a pineapple for fun!
Ingredients
- 170g Chicken breast (diced)
- 240g Fresh or frozen stir-fry veggies
- 30ml (2 Tbsp) Low-sodium soy sauce or coconut aminos
- 5ml (1 tsp) oil for cooking
- 150g Jasmine or basmati rice cooked
- 60g Fresh or frozen pineapple
- 15g Cashews unsalted (for crunch)

Instructions
- Cook chicken: Air fry at 375°F for 14–16 min, shaking halfway, or sauté in a nonstick pan over medium heat with a little oil until fully cooked.
- Sauté veggies: In a separate pan, lightly spray with oil and cook veggies 4–6 min until tender-crisp.
- Prepare rice: Cook or microwave rice according to package directions.
- Assemble your bowl:
- Add rice, chicken, veggies, and pineapple chunks.
- Drizzle soy sauce or coconut aminos, top with cashews for crunch.
