  • 70g avocado (about ½ small avocado)
  • 60ml unsweetened vanilla coconut milk
  • 1 scoop (30g) chocolate protein powder
  • 24g PBfit powder
  • 15g date syrup
  • 1 large egg white (about 30g)
  • 20g oat flour (or blended oats - helps structure)
  • 15g sugar free dark chocolate chips
  • ½ tsp baking powder
  • Pinch of sea salt

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Mash avocado until smooth. Add coconut milk, egg white, and date syrup. Mix well.
  3. Stir in protein powder, PBfit, oat flour, baking powder, and sea salt until combined.
  4. Fold in chocolate chips. Batter will be thicker than brownie batter but softer than cookie dough.
  5. Scoop into 8 cookie mounds and gently flatten slightly with the back of a spoon.
  6. Bake for 12–14 minutes until edges are set.
  7. Let cool for 10–15 minutes before touching (important!!). They firm up as they cool.
