Cinnamon-Glazed Carrots

Ingredients
- 1 pack Baby carrots (1 lb)
- 28g (2 tbsp) Coconut oil, melted
- 28g (2 tbsp) Coconut sugar
- 1–2 tsp cinnamon
- 1 tbsp Stevia or monk fruit
- Pinch sea salt

Instructions
- Pre-heat oven to 400°F.
- Toss sliced carrots with coconut oil, cinnamon, sweetener, and salt.
- Spread onto a sheet pan in a single layer.
- Bake 25–30 minutes, flipping halfway, until soft + caramelized. May need more time depending on how soft/hard you want the carrots.
