Protein Taco Scoops
A favorite Sunday Football appetizer! [Yields 4 Servings: 8 Chips per Serving]
Ingredients
- 200g Lean ground turkey (93%) cooked
- 8g Taco seasoning
- 150g Low-fat cottage cheese (whipped)
- 50g Greek yogurt (0%)
- 60g Pico de gallo
- 32 chips: Tostitos Scoops chips
- Romaine lettuce or toppings of choice [optional]

Skip just do extra greek yogurt or coconut yogurt for DF option
Instructions
- Brown ground turkey in a skillet over medium heat. Add taco seasoning and a splash of water; simmer 2–3 minutes.
- In a bowl, mix cottage cheese and Greek yogurt until smooth to create a creamy taco sauce.
- Portion for accuracy: 1) Divide cooked turkey into 4 equal portions (50 g each) 2) Divide cream mixture into 4 equal portions (50 g each)
- On each plate, place 8 tortilla scoops.
- Assemble each chip with approximately: 6–7g cooked turkey, 6–7g cream mixture, pico de gallo
- Serve immediately.
