  • 200g [1 cup] dry lentils
  • 150g red bell pepper, diced
  • 100g [1 cup] shredded carrots
  • 90g [1 cup] shredded red cabbage
  • ½ cup chopped green onions
  • ¼ cup chopped fresh cilantro
  • Zest of 1 orange
  • 60g [¼ cup] fresh orange juice
  • 14g [1 tbsp] sesame oil
  • 30g [2 tbsp] low-sodium soy sauce (or coconut aminos)
  • 20g [1 tbsp] maple syrup
  • 15g [1 tbsp] rice vinegar
  • 1–2 cloves garlic, minced
  • 1 tsp fresh grated ginger
  • 1 tbsp fresh lime juice
  • Salt to taste

  1. Cook quinoa and lentils together according to package directions.
  2. Fluff with a fork and allow to cool completely.
  3. Prep and chop all vegetables.
  4. In a separate bowl, whisk together all dressing ingredients until well combined.
  5. Add cooled quinoa and lentils to a large mixing bowl.
  6. Add chopped vegetables.
  7. Pour dressing over the top and toss thoroughly to combine.
  8. Season with salt to taste.
  9. Store in the refrigerator for up to 4 days.
