Quinoa & Lentil Salad
A hearty, fiber packed, colorful side dish or pair it with protein. [Yields 10 Servings. Macros per serving 215g or 1 cup]
Ingredients
- 170g [1 cup] dry quinoa
- 200g [1 cup] dry lentils
- 150g red bell pepper, diced
- 100g [1 cup] shredded carrots
- 90g [1 cup] shredded red cabbage
- ½ cup chopped green onions
- ¼ cup chopped fresh cilantro
- Zest of 1 orange
- 60g [¼ cup] fresh orange juice
- 14g [1 tbsp] sesame oil
- 30g [2 tbsp] low-sodium soy sauce (or coconut aminos)
- 20g [1 tbsp] maple syrup
- 15g [1 tbsp] rice vinegar
- 1–2 cloves garlic, minced
- 1 tsp fresh grated ginger
- 1 tbsp fresh lime juice
- Salt to taste

Instructions
- Cook quinoa and lentils together according to package directions.
- Fluff with a fork and allow to cool completely.
- Prep and chop all vegetables.
- In a separate bowl, whisk together all dressing ingredients until well combined.
- Add cooled quinoa and lentils to a large mixing bowl.
- Add chopped vegetables.
- Pour dressing over the top and toss thoroughly to combine.
- Season with salt to taste.
- Store in the refrigerator for up to 4 days.
