Southwest Power Bowl
An easy, macro friendly meal packed with protein and flavor | Yields 1 bowl
Ingredients
- 100g 93/7 lean ground beef
- 7g Siete Mild Taco Seasoning
- 100g fajita vegetables
- 50g whole egg (1 large)
- 75g liquid egg whites
- 130g baked sweet potato
- Avocado oil spray
- Optional: salsa, cilantro, hot sauce

Instructions
- Bake the sweet potato until fork tender.
- Brown the ground beef in a skillet. Add the Siete taco seasoning with a splash of water and cook until well coated.
- Sauté the fajita vegetables until tender.
- Cook the whole egg sunny side up and the egg whites until set.
- Assemble your bowl with the sweet potato, seasoned beef, fajita veggies, egg whites, and top with the sunny-side-up egg.
- Finish with salsa, cilantro, or hot sauce if desired.
