Spicy Chicken Lettuce Sandwich

Ingredients
- 1 pack ground chicken (preferably lean)
- 1 tbsp dijon mustard
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp cayenne (optional)
- 35 g Simple Mills Original Crackers, crushed finely
- 120 g plain Greek yogurt (nonfat or 2%)
- 1–2 tsp chipotle sauce or NuSauce
- ½ tsp honey (optional)
- squeeze lemon juice
- pinch salt
- iceberg or butter lettuce leaves
- sliced tomatoes or pickles (optional)

Lean ground turkey or lean ground beef
Simple Mills Crackers
GF panko or low calorie bread crumbs
Instructions
- Preheat air fryer: Heat to 400°F.
- In a bowl combine ground chicken, dijon, and spices.
- Form patties: Divide into 4 small patties.
- Press patties into the crushed Simple Mills crackers until coated.
- Place in air fryer and lightly spray with avocado oil spray. Cook 9–11 minutes, flipping halfway, until golden and cooked through.
- Make sauce: Stir together Greek yogurt, chipotle sauce, honey, lemon, and salt.
- Assemble: Place patties inside lettuce wraps and drizzle with sauce.
