  1. Preheat oven to 350°F.
  2. Line a 9x13 dish with parchment.
  3. Whisk 400g egg whites until smooth. Pour into dish.
  4. Evenly add spinach, sun-dried tomatoes, salt, and pepper. Top with feta.
  5. Bake for 20–25 minutes until fully set.
  6. Cool slightly, then cut into 6 equal portions (~95g each).
  7. Spread 12g light cream cheese onto each tortilla.
  8. Add egg portion, fold sides, and roll tightly.
  9. Toast in skillet 2–3 min per side until golden.
