Spinach Feta Egg White Wrap

Ingredients
- 400g egg whites (about 1 2/3 cups liquid egg whites)
- 30g fresh spinach, chopped
- 70g sun-dried tomatoes, chopped
- 75g crumbled feta cheese
- Salt & pepper, to taste
- 72g light cream cheese (12g per wrap)
- 6 whole wheat tortillas or Trader Joe’s Whole Wheat Lavash Flatbreads (24-26g carbs each)

Instructions
- Preheat oven to 350°F.
- Line a 9x13 dish with parchment.
- Whisk 400g egg whites until smooth. Pour into dish.
- Evenly add spinach, sun-dried tomatoes, salt, and pepper. Top with feta.
- Bake for 20–25 minutes until fully set.
- Cool slightly, then cut into 6 equal portions (~95g each).
- Spread 12g light cream cheese onto each tortilla.
- Add egg portion, fold sides, and roll tightly.
- Toast in skillet 2–3 min per side until golden.
