Sriracha Maple Stuffed Sweet Potato

- 200g Sweet Potato (cooked)
- 100g 93/7 Lean Ground Beef
- 1 serving Taco Seasoning (Siete brand)
- 1 serving Maple Sriracha Sauce (Nu Sauce brand-- or make yourself)
- Avocado Oil Spray

Instructions
- Preheat oven to 400 degrees
- Slice a large sweet potato in half, then halve again to create wedges
- Lightly coat with avocado oil spray
- Brush evenly to distribute oil
- Lie sweet potato down on cut side (skin side up)
- Place on baking sheet and bake for 25-30 minutes or until slightly caramelized
