  1. Dice 200g sweet potato. Microwave 3–4 minutes or parboil until slightly tender.
  2. Heat skillet over medium and add 5g olive oil.
  3. Add 113g ground turkey and cook fully through.
  4. Add 40g onion + 75g bell pepper, cook 3–4 minutes.
  5. Add sweet potato and cook until lightly browned and tender.
  6. Pour in 150g egg whites and add 1 whole egg.
  7. Cook to preference, stirring or leaving slightly set.
  8. Season and top as desired.
