Sweet Potato Breakfast Hash
Easy and delicious breakfast | Yields 1 Serving
Ingredients
- 200g Sweet potato (raw, diced)
- 113g (4oz) Extra lean ground turkey (99% lean, raw)
- 75g Bell pepper (diced)
- 40g Red onion (diced)
- 1 large Whole egg
- 150g Liquid egg whites
- 5g Olive oil: 5g
- Optional (to taste): Salt, pepper, paprika, parsley, hot sauce

Instructions
- Dice 200g sweet potato. Microwave 3–4 minutes or parboil until slightly tender.
- Heat skillet over medium and add 5g olive oil.
- Add 113g ground turkey and cook fully through.
- Add 40g onion + 75g bell pepper, cook 3–4 minutes.
- Add sweet potato and cook until lightly browned and tender.
- Pour in 150g egg whites and add 1 whole egg.
- Cook to preference, stirring or leaving slightly set.
- Season and top as desired.
