Chipotle Steak and Avocado Bowl
Smoky, spicy, and protein-packed bowl! Easy to make and put together-- but BOLD taste. [Serving 1]
Ingredients
- 150g (5.3 oz) Lean sirloin steak cooked
- 5g Olive oil
- 120g Fajita veggies (bell peppers, snap peas, onions)
- 50g Avocado
- 160g Cooked white rice
- ½ tsp Turmeric
- ½ tsp Garlic powder
- ½ tsp Onion powder
- Dash Salt + pepper to taste
- 1 tsp Lime juice
- 1 tsp Chipotle powder or smoked paprika

Instructions
- Cook white rice as in rice cooker or stove top. Stir in turmeric, garlic powder, onion powder, and salt to make yellow rice.
- Heat olive oil in a skillet over medium-high heat.
- Season steak with salt, pepper, and chipotle powder. Sear 3–4 min per side for medium-rare (adjust for preferred doneness).
- In the same pan, sauté fajita veggies 3–5 min until tender-crisp.
- Slice steak and serve over yellow rice with sautéed veggies.
- Top with avocado and a squeeze of lime juice-- Enjoy!
